WHY A BLOG

After 24 years in and around the restaurant business, I have been flattered with questions about this crazy business that I have chosen…or maybe it has chosen me.  Questions have run the gamut from how to cook certain things and how to fix them when something goes wrong (wish I could take credit for blackened redfish) to how to purchase quality ingredients.  Friends inevitably want to know the ins and outs or behind the scene tricks of the trade…stories about customers that I have met or have cooked for.  So, this blog is an open ended invitation to view my stories, experiences and insights of my Culinary Journey…

I also want to invite you to use this blog for yourself to ask questions…seek inspiration…become more at ease in the kitchen and customize what you get out of it.  I will do all I can to answer your questions in a timely manner with the same respect and enthusiasm that you have by reading this blog.

In this blog, I want to blend my Professional life with my Personal life…sharing Charleston’s Charm through Quality, Culinary and Uniqueness.  I will periodically update this blog with fun and exciting things that are going on in my Personal and Culinary life…some posts might be about a cooking class, a TV show that I am on…maybe about a catering event that I do or even a charity event that I am participating in….others might include a family picnic, a dock party or a trip to a winery.
